2-MIn. Peanut Butter Muffin

This recipe satisfies your dessert craving and takes 2 minutes to prepare!

Ingredients:

  • Almond meal flour
  • Lakanto peanut butter powder (or any PB powder you prefer)
  • Grass fed butter
  • Lakanto monk fruit sweetener
  • Baking powder
  • Egg whites

Directions:

  • I mix and cook all the ingredients in a glass mug:
  • 1 teaspoon softened butter (I just microwave in the mug for 10 seconds)
  • 2 tablespoons peanut butter powder
  • 2.5 tablespoons almond flour
  • 1 tablespoon sweetener
  • 2 tablespoons egg whites
  • dash of baking powder
  • Mix together and microwave for 1 min 10 secs.
  • Sprinkle some sweetener on top and add any other topping (like a dark chocolate square) Enjoy!
